Gluten Free Blondie Recipe
This dessert is my favorite by far and always has been, instead of cake for birthday and whatnot we had blondies. The ultimate cake and cupcake substitute. Now your probably wondering what a blondie is (if you do know already). A blondie is a -Drumroll please!- Vanilla flavored brownie (though I do wonder if you put chocolate chips in a blondie is it still a blondie?) If you want though you can make a brownie mix and marble it with the blondie mix for the amazing... Browdie (even I don't know how to pronounce it)! Even better they are gluten and dairy free
Ingredients
- 1/2 cup of butter or dairy free butter substitute
- 1/2 cup of sugar
- 1/2 cup light brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 3/4 of GF flour
- 1 teaspoon baking powder
- 1/2 teaspoon of salt
- 1/2 cup of chocolate chips
- 1/2 cup of white chocolate chips
- Optional: 1/4 cup of sprinkles+extra for topping
Directions:
- Preheat oven to 350 F
- Prepare 9x13 pan. With a piece of parchment paper cover the bottom and sides.
- In a medium bowl add butter, white and brown sugar. Beat with a hand or stand mixer.
- Add in eggs and vanilla extract. Beat for 3 minutes
- Add baking powder, salt and 1/2 cup of flour.
- Continue mixing with the mixer, add remaining flour slowly until fully mixed.
- Fold in chocolate chips, sprinkles and white chocolate chips. (You may omit white chocolate chips and replace with more chocolate chips.)
- Spread evenly into 9x13 pan. Add additionally sprinkles on top for decoration.
- Bake for 25 - 30 minutes. Crust will be brown. Coming out fresh from the oven will seem uncooked. Let fully cool in pan before slicing into squares.
- Store in a airtight container
