This soup was inspired by my late grandmother, she learned it from her mother-in-law which would be my late great grandmother. Also, this soup smells amazing when cooking.
Ingredients:
- Whole onion cut into fourths
- 62 oz chicken broth plus water
- 5 cups of water
- 4 stalks of celery cut into 1/4 of an inch
- 11 baby Carrots cut into 1/2 of an inch
- Seasoning of your choice
- Add Chicken broth, water, celery, carrots, seasoning, and onion. Set to a boil.
- Once boiling let simmer till vegetables are tender.
- Take off stove and cut chicken into desired size.
- Serve with sides such as rice, tortellini, bread (oh, gluten free of course).
- Store leftovers in an airtight container.
